Cheesy Stuffed Shells with Spinach
Ingredients: 16 jumbo shells, 2 cups ricotta, 1 cup cooked spinach (drained), 1 cup mozzarella, ½ cup Parmesan, 1 egg, 2 cups marinara, 1 tsp each oregano & garlic powder, salt & pepper, basil (optional). Instructions: Cook shells al dente (~9-10 mins). Drain & cool. Mix ricotta, spinach, cheeses, egg, and seasonings. Stuff shells, place in a dish with 1 cup marinara, top with rest of sauce. Bake covered at 375°F (190°C) for 25-30 mins, then uncovered for 5-10 mins. Garnish with basil. Serve hot!
