Ingredients (Serves 2): 2 fillets of sea bass (skin-on) 2 tbsp olive oil Salt & pepper to taste For the Tomato Herb Ragù: 2 medium ripe tomatoes, diced 1 small garlic clove, minced 1 tbsp olive oil 1 tsp balsamic vinegar Handful of fresh basil or parsley, chopped Pinch of chili flakes (optional) Instructions: Make the ragù: In a pan, heat olive oil and sauté garlic briefly. Add tomatoes, a splash of vinegar, salt, pepper, and simmer for 5–7 min. Stir in herbs at the end. Cook the fish: Pat fish dry. Heat oil in a skillet over medium-high. Sear skin-side down until crispy ( about 4-5min) then flip and cook 1-2 min more
