Preparing a batch of this Veggie Loaded Ground Beef Taco Bowl is one of my favorite ways to have a delicious and wholesome meal ready throughout the week. What I love about this recipe is the combination of hearty ground beef with plenty of colorful vegetables, making it not only filling but also nutrient-dense. Using a slow cooker to prepare the dish simplifies meal prep significantly. I usually add the ground beef, taco seasoning, tomatoes, black beans, and corn first and let it cook on high for about three hours. Then, adding bell peppers and onions for an extra hour on high brings in additional fiber and vitamins, balancing the dish. The homemade ranch dressing made from plain nonfat Greek yogurt and Fiesta Ranch seasoning is a great way to add creaminess without all the extra calories from traditional dressings. Plus, it’s high in protein and probiotics, which are good for digestion. Adjusting the thickness with a little water makes it perfect as a drizzle over the bowl or as a dip. Cooking bone broth with rice adds a subtle depth of flavor and extra nutrients like collagen and minerals. When you divide everything into meal prep containers, it’s easy to grab a nutrient-packed lunch or dinner, saving time on busy days. I also appreciate that this recipe is flexible—for instance, you can add other vegetables such as zucchini or mushrooms, or swap the ground beef for ground turkey or chicken if preferred. For those watching their carb intake, cauliflower rice can be a tasty alternative to regular rice. Overall, this taco bowl is a balanced meal that provides protein, fiber, and essential vitamins, making it ideal for anyone looking to maintain a healthy diet without sacrificing flavor or convenience.
