cupcakes:
1 1/2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter, softened
3/4 cup sugar
2 eggs
2 tsp vanilla
1/2 cup coconut milk
1/4 cup milk
frosting:
1 cup butter, softened
3 cups powdered sugar
2–3 tbsp coconut milk
1 tsp vanilla
topping:
shredded coconut, toasted
directions:
bake cupcakes at 350°F for 18–20 min
cool completely
beat frosting ingredients until fluffy
top cupcakes & sprinkle with toasted coconut
