Chef Pam's New Menu! When "Kha" Becomes A Hero
Returning to Khao Sak, Chef Pam's contemporary Thai restaurant @ chef.pam on the street is drawn again. This round is very special because the shop has just launched five new Seasonal menus that take "Kha," one of the basic flavors of the Thai kitchen, as the protagonist. It presents the charm of a variety of Kha species with a unique personality, like the Thai dialect hidden in the dish.
Today we've tried three dishes from the new series of menus. It's complicated but easy to access.
🌶️ Real Pig's Neck Raw Banana Jungle Curry This dish, the chef chose a "red news" that smells dark, deep, and spicy, to be pounded into a spicy curry, cut spicy with the bouncy softness of the pig's neck, and a thin astringent sweetness dimension from the Raw Wet Orchid.
🥓 Smoked pork belly for a long time. Smoked pork belly lasts up to 8 hours until it is unique. It is grilled and coated with dry sauce with sugar. The cool thing is to serve with "burnt sauce" that uses wild pork to make it spicy. It is made in the style of seafood dipping sauce, sour, sweet, salty, spicy, and perfect.
🐟 fried daily fish yellow Lao vegetable soup, a vegetable soup that interprets the northeastern style of vegetable yum, a soft and light sweet aroma of "yellow kha," served alongside the daily fish, which today is a crispy fried bass before eating, squeezing a grapefruit on the fish, adding refreshment. Dine with Lao cilantro is very compatible.
And the menu that doesn't miss it is "Eggplant Soup, Chef Pam's House," a menu of memories inspired by the chef's mother's hand flavor, served in a crispy cockerel, eaten with words, hidden on the inside, fire-grilled sticky rice and cucumber for refreshing textures, and the other is "shrimp, puffy, flinching lime, dapper." These two dishes are delicious, really impressive.
This meal is eaten with daily rice, "purple peak light rice" from Trang Province, hot cooking, fun chewing.
Finish with the sweet fish sauce granita, which brings the fish sauce from Trad province to simmer with the sugar of Ton Phetchaburi until it is fragrant. Make a cool granita, eat with mangoes, leeches, grapefruit, topped with fragrance. It's sour, sweet, salty, and perfect.
