Protein-Packed Tofu & Egg Salad 🥚

A nutritious and delicious salad to fuel your day!

📝 Ingredients:

200g firm tofu, cubed

1 cup mushrooms, sliced

½ cup cherry tomatoes, halved

2 green onions, chopped

1 cup broccoli florets, steamed

½ avocado, chopped

2 hard-boiled eggs, halved

2 cups romaine lettuce, chopped

1 tbsp olive oil

1 tsp soy sauce

½ tsp garlic powder

½ tsp black pepper

½ tsp chili flakes (optional)

🍽️ Step by Step:

1️⃣ Prepare the Tofu:

Cut tofu into small cubes and pat dry with a paper towel.

2️⃣ Sauté the Vegetables & Tofu:

Heat olive oil in a pan over medium heat.

Add tofu cubes and cook until golden brown.

Add mushrooms, green onions, and cherry tomatoes.

Season with soy sauce, garlic powder, black pepper, and chili flakes.

Sauté for 5 minutes, then remove from heat.

3️⃣ Steam the Broccoli:

Steam broccoli florets for 3–4 minutes until tender but still crisp.

4️⃣ Assemble the Salad:

Arrange romaine lettuce as a base in a large bowl.

Add the sautéed tofu and vegetables on top.

Place steamed broccoli, avocado slices, and halved boiled eggs around the bowl.

5️⃣ Serve & Enjoy:

Drizzle with extra olive oil or a light dressing if desired.
