Okay, so you just saw my super easy ground beef rice noodle recipe, and I absolutely love it for a quick weeknight meal! But you know what? One of the best things about rice noodles, or 'long rice' as some of you might call them, is how incredibly versatile they are. Seriously, once you master the basic stir-fry technique, you can swap out proteins and veggies endlessly! I've had so many friends ask me for a 'chicken long rice' recipe, and I totally get it – it's a classic for a reason. While my main recipe here uses ground beef, transforming it into a delicious chicken version is super simple and just as quick. Here's how I usually make my 'chicken long rice' when I'm craving it: First, you'll want to use about 1 lb of boneless, skinless chicken. Chicken breast or thighs work great; I personally love thighs for stir-fries because they stay juicier. Cut your chicken into bite-sized pieces or thin strips. For extra flavor and tenderness, I often marinate the chicken for about 15-20 minutes beforehand. A simple marinade of a tablespoon of soy sauce, a teaspoon of cornstarch (this really helps with tenderness!), and a dash of sesame oil works wonders. Then, just like in the beef recipe, you'll cook your rice noodles according to package directions and set them aside. In the same pan you'd use for the beef, heat a tablespoon of vegetable oil. Add your marinated chicken and stir-fry it until it's cooked through and lightly browned – usually about 5-7 minutes. Remove the chicken and set it aside with your cooked rice noodles. Now, for the veggies! You can absolutely stick with bell peppers and carrots, which are fantastic. But for a chicken long rice, I sometimes love adding sliced snap peas, broccoli florets, or even some thinly sliced cabbage. Just sauté your garlic, then add your chosen veggies and stir-fry until they're crisp-tender. Finally, bring it all together! Return your cooked chicken and prepared rice noodles to the pan with the veggies. Pour in the soy sauce and sesame oil, just like in the original recipe. If you want a slightly richer sauce for your chicken version, you can whisk in an extra tablespoon of oyster sauce or a little bit of chicken broth with a pinch of brown sugar. Toss everything until it's well combined and heated through. Taste and adjust seasonings – maybe a little more pepper or a splash of rice vinegar for brightness. What I love about making 'chicken long rice' at home is how fresh and satisfying it tastes. It's so much healthier than takeout, and you can customize it with whatever vegetables you have on hand. Plus, it's a fantastic way to use up leftover chicken if you have some! This dish is truly a weeknight hero, proving that 'rice noodles' can be the base for endless delicious dinner creations, whether you're team beef or team chicken. Give it a try, and let me know how you customize yours!
