Pineapple Sunshine cake

Also known as pig pickin cake.

for the cake:

One box of yellow cake mix

11 ounce can mandarin oranges

Prepare cake mix according to directions. Add can of mandarin oranges with juice.

Pour into a greased and floured 9x13 pan

Bake at 325 for approximately 40 minutes .

Topping:

16oz tub thawed cool whip

20oz can of crushed pineapple

1 5oz pkg of vanilla pudding . (If you can find French vanilla, it’s even better)

Add box of pudding mix and drained can of crushed pineapple to cool whip . Mix and refrigerate.

Once cake is cooled off , frost cake.

Decorate with fresh pineapple . Some people like to add nuts.

I also like to make this cake during the Fourth of July and when I do that, I decorate with fresh strawberries and blueberries.
