Beef Morcon (Filipino-Style Rolled Beef)🥩

1 kg beef sirloin or round (thinly sliced, for rolling)
1 cup soy sauce
1 cup calamansi juice (or lemon juice)
4 cloves garlic, minced
1 tsp ground black pepper
3 pcs hotdogs (cut into strips)
3 pcs boiled eggs (quartered lengthwise)
1 medium carrot (cut into strips)
1 medium pickle or cucumber (cut into strips)
3 slices cheese (cut into strips)
1 large onion (chopped)
2 cups tomato sauce
1 ½ cups beef broth or water
2 tbsp cooking oil
2 tbsp flour (optional, for thickening)
Salt and pepper to taste

Instructions:📍
1. Marinate the Beef:
Combine soy sauce, calamansi juice, minced garlic, and black pepper.
Marinate the beef slices for at least 1 hour (overnight for better flavor).
2. Prepare the Fillings:
Lay out each beef slice flat.
Arrange hotdog, boiled egg, carrot, pickle, and cheese strips on one side.
Roll the beef tightly and secure with kitchen twine or toothpicks.
3. Pan-Fry the Rolls:
Heat oil in a pan over medium heat.
Brown the beef rolls on all sides. Set aside.
4. Make the Sauce:
In the same pan, sauté onions and garlic until fragrant.
Add tomato sauce and beef broth (or water).
Return the beef rolls to the pan and simmer on low heat for 1.5 to 2 hours or until beef is tender. Add more water if needed.
5. Optional Thickening:
Mix flour with a little water, then pour into the sauce to thicken.
Simmer for another 5–10 minutes.
6. Season and Serve:
Adjust salt and pepper to taste.
Remove strings or toothpicks, slice into rounds, and pour sauce over the top.
