Ingredients:

For the Cod:

• 4 cod fillets

• Spices of choice

• 1 cup seasoned flour

• 2 tbsp olive oil

For the Cauliflower Purée:

• 1 medium cauliflower head, chopped

• Garlic cloves

• 1/4 cup heavy cream

• 2 tbsp unsalted butter

• Salt and pepper

For the Green Beans:

• 1 lb green beans, trimmed

• 1/2 cup cherry tomatoes, halved

• 1/2 cup baby Bella mushrooms, sliced

• 2 cloves garlic, minced

• 2 tbsp olive oil

• Seasoning of choice

Instructions:

1. Cauliflower Purée:

• Boil cauliflower in milk or water until soft (about 10 minutes).

• Drain and blend with heavy cream, butter, salt, and pepper until smooth. Set aside.

2. Pan-Seared Cod:

• Season cod fillets with spices of choice.

• Coat fillets in egg, then your flour mix.

• Heat olive oil in a skillet over medium heat and sear cod for 3-4 minutes per side, until golden and cooked through.

3. Sautéed Green Beans:

• Heat olive oil in a skillet over medium heat.

• Add garlic, green beans, tomatoes, and mushrooms. Season with spices of choice.

• Sauté for 5-7 minutes until tender and slightly caramelized.
