Homemade Marshmallow Tips

Scrolling through my page, you’ll see treats and bakes that I make in my kitchen! If it’s store-bought, I really don’t want it and I will do my best to re-create snacks, candies, breads, foods…you name it with simple ingredients. Just a sneak-peek into my life as a trad-wife and Pastry Chef. 💚

It’s summertime and I am all about foods that embody each season and bring it to life. It’s only fitting that I make S’more kits for my kids and community! 🍫 I won’t share the recipe, today, but you can find fool-proof ones all over Pinterest or Google. If you think that this will be “easy” think again, because marshmallows along with all candy is time-consuming when executed properly. I am sharing tips on how to get the best result!

1. If you don’t have something the recipe calls for…MOVE ON. Don’t try to sub it out just find a recioe that calls for exactly what you have or are buying.

2. Candy=NO HUMIDITY. Do NOT try to make candy or marshmallows when it’s more than 40% humid. Your climate matters in this equation and it won’t set or will stay gummy/gooey.

3. When creating Marshmallows you must use a powdered substance like cornstarch…if you are going natural it’s super hard to make these mallows because you do NEED gelatin….the origina, unflavoredl kind with bone-marrow for the proper setting technique.

4. YOU WILL GET STICKY! No mess? There is no such thing 😅

5. If the sides don’t attempt to roll up while you spread your mallow cream…you didn’t mix long enough so start over! Once you stop whisking, the cream starts coming together quick and is uber sticky.

One of the biggest culprits, as mentioned, is humidity. I once tried making marshmallows on a particularly muggy summer day, convinced I could beat the odds. Spoiler alert: I couldn't! My beautiful textured marshmallow mixture simply refused to firm up, staying stubbornly soft and gooey. Now, I always check the weather. If it's above 40% humidity, I save my marshmallow-making for another day. It really does make a huge difference in whether your marshmallows will set properly. Beyond humidity, another common reason for sticky marshmallows is an undercooked sugar syrup. You might think "close enough" when it comes to temperature, but believe me, it's not! I learned the hard way that a reliable candy thermometer is your best friend. If your syrup doesn't reach the exact temperature specified in your recipe (usually around 240-250°F, or soft ball stage), your marshmallows won't have the structural integrity to hold their shape and will remain stubbornly sticky. Don't eyeball it; invest in that thermometer! After pouring your perfectly cooked syrup into your whipped gelatin, the mixing technique becomes paramount. The original article wisely points out that if your mixture isn't beaten long enough, it won't be right. I've found that you need to beat it for a surprisingly long time – often 10-15 minutes, until it's super thick, glossy, and has cooled down significantly. You'll know it's properly mixed marshmallow when it forms stiff peaks and, as the article mentions, folds as you spread it, rather than just slumping. If you stop too soon, it won't aerate enough, leading to a denser, stickier mallow. Once your glorious batch is made and cooled, don't forget the finishing touch: a generous dusting of cornstarch and powdered sugar.
