Sweet Potato Pancakes

Ingredients (makes about 10 pancakes)

• 1 cup mashed sweet potato (about 1 medium sweet potato, cooked and mashed)

• 1 ½ cups all-purpose flour

• 2 tbsp brown sugar

• 2 tsp baking powder

• ½ tsp baking soda

• ½ tsp ground cinnamon

• ¼ tsp nutmeg (optional)

• ¼ tsp salt

• 2 large eggs

• 1 ¼ cups milk (dairy or non-dairy)

• 1 tsp vanilla extract

• 2 tbsp melted butter or oil (plus more for cooking)

Instructions

1. Prepare the sweet potato:

Bake, boil, or microwave a sweet potato until soft. Let cool, then mash until smooth. Measure out 1 cup.

2. Mix dry ingredients:

In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

3. Mix wet ingredients:

In another bowl, beat the eggs, then add the milk, vanilla, mashed sweet potato, and melted butter. Mix well.

4. Combine:

Pour the wet mixture into the dry ingredients and stir gently until just combined. Don’t overmix; a few lumps are fine.

5. Cook:

Heat a lightly greased pan or griddle over medium heat. Pour ¼ cup of batter per pancake. Cook 2–3 minutes per side, or until golden and cooked through.

6. Serve:

Top with your favorite toppings 😋
