From scratch chocolate chip cookies
Now this was really just being a good wife. I’m actually allergic to chocolate so I just made these at my husband’s request.
I was raised averse to box mixes or premade dough; you don’t get the same love. I’ve made so many cookies over the years I just eyeball my mix but it’s generally the same as on the back of the chocolate chip packages.
Some of my key tips:
I use Mexican Vanilla from my local tienda. I’ve never really seen the difference between salted and unsalted butter so I just use whatever I have in the fridge. I always sift my dry ingredients into the wet mix, I think the sifting is necessary for the best textured cookies.
The most important parts of the actual baking:
Set the oven to 375°, wait till completely preheated but the cookies in the oven for 8-10 minutes depending on your oven. Once they are just brown around the edges pull them out and place on top of your stove while your oven remains hot. Leave them for 4-5 minutes before transferring to a cooling rack.
Enjoy!
Baking chocolate chip cookies from scratch is not only rewarding but also allows you to customize your cookies to suit your preferences. Many bakers find that using quality ingredients like Mexican Vanilla enhances the depth and aroma of the cookies, contributing to a richer flavor profile. It's also helpful to know why sifting dry ingredients is crucial: it aerates the flour and ensures even mixing, which leads to a more tender and consistent cookie texture. Another useful technique is understanding your oven’s quirks. While the general advice is to bake at 375°F for 8-10 minutes, oven temperatures can vary significantly, so keeping a close eye on your cookies as they brown around the edges is key. Placing the hot cookies on a stove top instead of a cold surface allows residual heat to continue gently baking the cookies without overcooking them, which helps maintain a chewy center and crispy edges. For those who might be allergic to chocolate or want to experiment, baking from scratch enables substituting chocolate chips with alternatives like butterscotch, nuts, or dried fruit without sacrificing the cookie's overall structure and taste. Homemade cookies also avoid preservatives and additives common in box mixes, giving you a fresher, more wholesome treat. Finally, embracing baking as a creative and personal process means you can develop your signature cookie by adjusting sugar levels, experimenting with different types of butter (salted or unsalted), or adding a pinch of sea salt on top to amplify flavors. Whether baking to share or enjoy with family, these cookies made with care and simple techniques bring warmth and joy to any kitchen.

Oh my goodness, I’m allergic to chocolate too. My husband and daughter loves chocolate so it’s always a labor of love when I make brownies, cookies, or buckeyes 😂😂
