This Greek Salad Is So Refreshing!
I LOVE salads, and this one is definitely my new favorite. The refreshing crunch of the cucumber really sets this dish apart! I just know that I'll be making it all spring. Here’s my recipe!
Ingredients 🛒:
• ¼ cup extra virgin olive oil
• 1 tsp lemon-red wine mix (½ tsp lemon, ½ tsp red wine)
• 1 garlic clove minced
• ½ tsp dried oregano, more for sprinkling
• ¼ tsp dijon mustard
• ¼ tsp sea salt
• Freshly ground black pepper
For the salad:
• 1 English cucumber, cut lengthwise, seeded, and sliced ¼-inch thick
• 1 yellow bell pepper, chopped into 1/2-inch pieces
• 2 cups halved cherry tomatoes
• 5 ounces crumbled feta cheese
• ⅓ cup thinly sliced red onion
• ⅓ cup olives
Instructions 👩🍳:
1️⃣ Make the dressing: In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt, and several grinds of pepper.
2️⃣ Shock the onion (optional). If you’d like to mellow the onion’s raw taste, fill a small bowl with ice water. Add about 1 teaspoon of red wine vinegar to the water, then add the sliced onion. Set aside to soak for 10 minutes or so.
3️⃣ In a large bowl, toss the cucumber, green pepper, cherry tomatoes, feta cheese, red onions, and olives. Drizzle with the dressing and very gently toss. Enjoy!
