Pillowy Gnocchi For a Cozy Night In
I grew up thinking potatoes were just for mashing or roasting, until I realized they could be transformed into the most delicate, pillowy bites imaginable. There is something so satisfying about spending a quiet afternoon turning a simple bag of potatoes into a mountain of soft, golden dough. It’s my favorite way to slow down and show some love to the humblest vegetable in my pantry, resulting in a comfort meal that feels like a warm hug.
Ingredients 🛒:
• 2½ lbs potatoes
• 2½ cups all-purpose flour
• 1 egg
• ½ tsp salt
Instructions 🧑🍳:
1️⃣ Boil the Potatoes: Boil the potatoes with the skins on (this keeps them dry, which is the secret to fluffy gnocchi!). Cook for about 20 minutes until fork-tender, but don't overdo it or they’ll get mushy.
2️⃣ Rice & Prep: Drain them well and let them cool. Peel off the skins and run them through a potato ricer onto a clean counter. If they seem a bit damp, let them rest on a kitchen towel for a minute to soak up that extra moisture.
3️⃣ Make the Dough: Mound your riced potatoes, top with flour and salt, and create a "well" in the center. Crack your egg into the middle, whisk it gently with a fork, and slowly start incorporating the potato and flour.
4️⃣ Knead Gently: Use your hands to bring it all together into a dough.
5️⃣ Roll & Cut: Cut your dough into 8-10 pieces. Roll each piece into a long "rope" (thick ropes for hearty bites, thin for dainty ones). Slice them into 1-inch pieces and toss them in a little extra flour so they don't stick.
6️⃣ The Quick Boil: Drop them into salted boiling water. As soon as they float to the top (usually 2–4 minutes), they’re done!
7️⃣ Serve: Scoop them out with a slotted spoon and toss them directly into your favorite sauce for a minute to coat everything beautifully, or plate them and drizzle the sauce directly over them!
Chef’s Tip 💡:
• If you aren’t eating them right away, freeze them on a baking sheet for 2 hours before moving them to a bag. When the craving hits, just boil them straight from frozen!
• Knead just until combined! Over-kneading or adding too much flour will make them tough, and we want them light as air.
