Makes: 2 (9-inch) layers

Ingredients

For the cake:

* 2 cups all-purpose flour

* 2 cups sugar

* ¾ cup unsweetened cocoa powder Cocoa powder

* 2 tsp baking soda

* ½ tsp baking powder

* ½ tsp salt

* 1 cup mayonnaise Mayonnaise (Hellmans)

* 1 cup warm water or coffee ☕ (coffee deepens the chocolate flavor)

* 2 large eggs

* 2 tsp vanilla extract Vanilla extract

For the frosting:

* 1 cup butter, softened

* ⅔ cup cocoa powder

* 3 cups powdered sugar

* ⅓ cup heavy cream

* 2 tsp vanilla

* pinch of salt

Directions

1. Preheat oven to 350°F. Grease and flour two 9-inch cake pans.

2. In a large bowl, whisk flour, sugar, cocoa, baking soda, baking powder, and salt.

3. Add mayo, warm water/coffee, eggs, and vanilla. Beat until smooth (about 2 minutes).

4. Divide batter evenly between pans.

5. Bake 28–32 minutes, until a toothpick comes out clean.

6. Cool 10 minutes in pans, then transfer to wire racks to cool completely.

Frosting:

1. Beat butter until fluffy.

2. Add cocoa, then powdered sugar alternating with cream.

3. Mix in vanilla and salt. Beat until silky.

Assemble:
