30 Minute Tomato Sauce for Weeknight Pasta Dinners
My favorite 30-minute weeknight pasta sauce.
As a pasta lover, I've experimented with a lot of quick sauces, but this is the one I always return to on busy weeknights: tomato mushroom sauce.
Mushrooms and heirloom tomatoes are quick simmered in a shallow frying pan or braiser, infused with olive oil and garlic to make the perfect 30 minute tomato sauce.
Fun fact for my fellow gamers: this recipe was actually inspired by the Fruit and Mushroom Mix from Zelda Breath of the Wild! This recipe is part of my Legend of Zelda cooking pot series.
Ingredients:
-Extra-virgin olive oil
-Garlic
-Onion
-Mushroom
-Tomatoes, fresh or canned (or passata)
-Fresh herbs
-Salt and pepper
-Parmesan cheese (optional)
1. Sauté the garlic and onion in olive oil (use a large frying pan).
2. Add the mushrooms and cook until browned.
3. Add the tomatoes and herbs.
4. Simmer until thickened.
5. Toss with cooked pasta and top with parmesan.
A few ways to switch it up:
-Add a little starchy pasta water to the sauce just before serving to make the sauce creamier.
-Swap the mushrooms for fresh chopped zucchini in late summer.
-For protein, serve with roast chicken or lamb. I personally also like serving it with canned tuna in olive oil, smoked sardines, or even crumbled tofu. Other cheeses like feta or goat also work.
