Butter Chicken: Most Requested Recipe
Butter chicken is the most requested recipe I make for my parties. Usually a double batch makes half tray, but I might have had more chicken than I realized. Here’s the recipe:
Butter Chicken
9-10lbs chicken breast cubed
2 Tbsp Kashmiri Chili Powder
2 Tbsp garlic purée
2 inch of ginger grated
2.5 tsp kosher salt
Mix and marinate. Cook 5 mins in pan in batches. In same pan make the sauce.
5 Tbsp Ghee or Butter, unsalted
1000g Roma tomatoes
200g red onions
100g raw cashews
2.5 tsp kosher salt
2 tbsp Kashmiri Chilli Powder
2 tsp fenugreek leaves (Kasoori Methi)
1 tsp garam masala
1 tsp sugar
2 tbsp malt vinegar
Heat butter. Fry onions. Add spices. Cook for minute. Add tomatoes, cashewsBlend. Pour out. Add to jug:
1-1/2 cup water
Swish around in jug. Pour into pan.
5 Tbsp butter
1/2 cup cream
Add chicken. Put in aluminum 1/2 tray containers or 9x13 dish.
