Baked Avocado Tacos
Ingredients
Avocado oil spray
2 avocados, sliced
2 cups panko crumbs
3 eggs
2 cups flour
2 tsp paprika
2 tsp onion powder
2 tsp garlic powder
2 tsp chili powder
1 tsp salt
1 tsp pepper
Tortillas (store-bought or homemade)
Instructions
Preheat the oven to 450°F.
Prepare the avocados by halving them, removing the pit and peel, and slicing into about ¼-inch thick pieces.
Create a breading station with three bowls:
Bowl 1: Flour with a pinch of salt and pepper
Bowl 2: Scrambled eggs
Bowl 3: Panko crumbs mixed with paprika, onion powder, garlic powder, chili powder, salt, and pepper
Bread the avocado slices by coating them in flour, then dipping them into the egg, and finally covering them in the seasoned panko.
Place on a baking sheet, lightly spray with avocado oil, and bake for 25–30 minutes, until golden and crispy. The inside should remain creamy while the exterior becomes lightly crunchy.
While the avocados bake, warm your tortillas and prepare your favorite toppings.
Assemble the tacos by adding the crispy avocado slices to warm tortillas and finishing with your desired toppings. #avocadorecipes #avocadotacos #tacorecipe
Baked avocado tacos offer a wonderful twist on traditional tacos by adding a crispy texture to the naturally creamy avocado. The key to achieving this contrast is the unique breading process described: coating avocado slices first in seasoned flour, then egg, and finally in a panko crumb mixture spiced with paprika, onion powder, garlic powder, and chili powder. Baking these instead of frying not only creates a healthier alternative but also enhances the flavors with a pleasant crunch. In my experience making these tacos, using ripe but firm avocados is essential. Overripe avocados can become too mushy and won’t hold up well during the breading and baking process. Also, lightly spraying the breaded avocado slices with avocado oil before baking helps to achieve that golden, crispy finish without excess fat. For toppings, consider fresh options like shredded lettuce, diced tomatoes, chopped cilantro, and a squeeze of lime for brightness. A dollop of sour cream or a tangy yogurt-based sauce complements the spicy crust perfectly. Some avocado taco fans also enjoy adding pickled red onions or a fresh salsa to balance the richness. This recipe is incredibly versatile—you can customize the spice level by adjusting the chili powder amount or adding cayenne pepper if you prefer extra heat. Serving the baked avocado slices on either store-bought or homemade tortillas makes the preparation easy, and warming the tortillas ensures everything comes together with the right texture and warmth. Overall, baked avocado tacos are a great way to enjoy the health benefits of avocado in a fun, crispy form. They’re perfect for casual dinners, meal prepping, or impressing guests with a plant-based delight that doesn’t skimp on flavor or texture.
