Easy but fancy recipe for lazy people pt 12: Carbonara

This is a fancy dish to impress your partner (or me cos i love pasta). It's fancy cos the ingredients you use are very specific.

Ingredients are simple:

- Pasta (preferably linguine)

- Eggs (2 large or 3 small for 2 pax)

- Pepper & Salt

- Parmigiano Reggiano Cheese > You can sub with Parmesan cheese but it wont be perfecto.

- Guanciale > You can sub with bacon but it wont be authentico.

- Garlic (optional)

Steps:

1. Cook your pasta, add salt to your boiling water. Remember to save some of your pasta water.

2. Prep your sauce: add 2 eggs, finely-grated cheese and pepper all in a bowl. Be generous w your cheese, keep grating until you cover your eggs. Mix them all together.

3. Dice your guanciale / bacon. Keep them tiny so when you fry them they turn crispy faster.

4. Add your guanciale / bacon and 2 garlic cloves into the pan. No need add oil cos they are fatty enough. Fry until they are brown and crispy.

5. Off the heat. And i repeat must off the heat cos you dont want your sauce to turn into cooked egg. Add 2 tablespoons of pasta water into pan. Add the cooked pasta into the pan and then add your sauce. Mix fast and vigorously - can use thongs or if you pro, you can flip them in the pan.

Your sauce should coat your pasta nicely.

Eat well. Be well. Remember to eat your veggies in the next meal 😉
