OLIVE OIL CAKE🍋

This olive oil cake is a staple for me. It is moist, dense, yet pillowy soft at the same time and full of fresh flavors!

This cake I brought to someone’s house for a dinner party, another plus to this cake is it’s not so common so it’s great to bring as a gift.

Recipe—

1 cup flour

1 1/2 cup almond flour

1 tbsp baking powder

1/2 tsp salt

4 eggs

1 1/2 cup white sugar

1/3 cup extra virgin olive oil

1/3 cup whole milk plain yogurt (must be whole milk)

orange/lemon zest or extract (zest tastes fresher to me)

Mix dry ingredients in a large mixing bowl and set aside. In a stand mixer combine wet ingredients. Slowly add dry ingredients to wet ingredients until fully combined. Bake at 350 degrees F for 35-50 minutes or until toothpick comes out clean in the middle.

Use a sifter to top with powdered sugar. Add lemon slices and a spring of rosemary!
