blackberry pie matcha 🥧🍵🤭 might be my new favorite combo!!! inspired by the one at @rhythmzeronyc :)
for the blackberry compote: I cooked down about 1 heaping cup of fresh blackberries, squeeze of lemon juice, and 1/4 cup maple syrup until jammy!
for the pie syrup: I whisked together 1 tbsp butter, 1 cup brown sugar, 1 cup water, 1/2 tsp cinnamon, 1 tsp vanilla bean paste, and 1 tsp almond extract in a saucepan over low-medium heat. And let it simmer for about 10 minutes 🧈
I've recently fallen in love with combining fruity, sweet flavors with matcha, and this blackberry pie matcha has quickly become a favorite in my kitchen. What makes this recipe stand out is its balance between the tartness of fresh blackberries and the warm, comforting spices in the pie syrup. When making the blackberry compote, I find that using fresh, ripe blackberries truly elevates the flavor, and cooking them down until jammy with a bit of lemon juice helps brighten the mix and balance the sweetness from the maple syrup. The process is simple but rewarding — just letting it simmer slowly until you get that perfect thickness. For the pie syrup, whisking butter with brown sugar and spices like cinnamon and almond extract creates a luscious, aromatic syrup that complements the earthiness of matcha wonderfully. The vanilla bean paste adds a lovely depth that's hard to replace, but if you don't have it, good-quality vanilla extract works fine. I typically simmer the syrup gently to allow all the flavors to meld without burning the sugar. When combining everything, I mix the matcha tea with just a splash of the pie syrup and a spoonful of the blackberry compote, layering the flavors so each sip includes creamy, sweet, tangy, and slightly spicy notes. This combination is excellent for an afternoon pick-me-up or a cozy weekend treat. For those new to matcha, this recipe makes it more approachable by balancing the bitterness with sweetness and fruitiness. Plus, making your syrups and compote from scratch means you can control the sweetness and enjoy a fresher, more natural taste than store-bought alternatives. Overall, experimenting with different fruit compotes—like blueberry or raspberry—could also be enjoyable. But the blackberry's natural tartness paired with the warm spices in the pie syrup is definitely a winning combo that I highly recommend trying at home.
