It’s seriously a game-changer for elevating any beverage, and honestly, making it yourself is so much more satisfying than buying it. Plus, you can totally tweak it exactly to your liking – less sugar, more tea, whatever your heart desires! I’ve tried a few methods, but I’ve finally perfected a super easy recipe that delivers that perfect bouncy, melt-in-your-mouth texture every single time. Here’s how I do it, and trust me, you'll love it! What you'll need: 2-3 black tea bags (or 1 tbsp loose leaf black tea, like Ceylon or Assam) 1 cup hot water 1/4 cup granulated sugar (adjust to your sweetness preference) 1 cup milk (dairy or non-dairy works great! I often use oat milk for creaminess) 1 packet unflavored gelatin (about 7g) or 1 tsp agar-agar powder for a vegan option My Easy Milk Tea Jelly Steps: First things first, brew your tea! Steep the tea bags in hot water for about 5 minutes, or until it’s nice and strong. If using loose leaf, steep and then strain. Remove the tea bags/leaves and set the tea aside to cool slightly. In a small bowl, sprinkle the gelatin powder over 1/4 cup of cold water and let it bloom for 5 minutes. It will thicken into a paste. If you're using agar-agar, you'll mix it directly with some of the liquid in step 3. In a saucepan, combine your brewed tea, sugar, and milk. Heat over medium-low heat, stirring constantly, until the sugar completely dissolves. Don’t let it boil! This is where you can really taste and adjust the sweetness to your preference. For agar-agar users, add it now and bring to a boil for 1-2 minutes to activate. Once the sugar is dissolved (and agar-agar is activated if using), add the bloomed gelatin to the warm milk tea mixture and stir until it's fully dissolved. Make sure there are no lumps! This is crucial for a smooth jelly. Give it a good stir until it's completely incorporated. Pour the mixture into a heat-proof container or individual molds. Let it cool down to room temperature, then pop it into the fridge for at least 3-4 hours, or until it's perfectly set and jiggly. I always do this overnight for the best results and a firmer set! Pro Tip for the Perfect Texture: When I'm pouring, I sometimes give it a little strain to catch any tiny tea leaves if I used loose leaf. And for that perfect SPOONFUL ES F (spoonful of) deliciousness, make sure your gelatin is fully dissolved. Nothing worse than grainy jelly! A little whisking after adding the gelatin helps ensure everything is smooth. Thai Tea Jelly Twist: If you're a fan of Thai tea like I am, it’s super easy to switch it up! Just substitute the black tea bags with 2-3 tablespoons of Thai tea mix. Brew it strongly with hot water (you’ll notice the bright orange color), then strain it thoroughly before adding the milk, sugar, and gelatin. The vibrant orange color and unique spiced flavor of Thai tea jelly are just divine. It’s a whole different vibe, perfect for a hot summer day or to add to your favorite iced Thai milk tea! Once your jelly is set, you can cut it into cubes or use a spoon to scoop out irregular shapes.
