Pistachio Crunch Cake (6-in cake)

Ingredients

Cake Batter

• 5 tbsp softened butter

• 1 tbsp pistachio spread (mixed into the butter)

• 1/2 cup sugar (reduce by 1 tbsp for less sweet)

• 1 egg

• 1 tbsp vanilla

• 1/2 cup flour plus 2 tbsp

• 2 tbsp finely ground pistachio

• 1/4 tsp baking soda

• pinch of salt

• 4 tbsp milk

• 1 1/2 tbsp creamy pistachio spread (mixed into the milk)

• 1/2 tsp apple cider vinegar

Ganache

• 2 tbsp milk (or dairy‑free milk)

• 1 tbsp pistachio spread

• 4 tbsp dark chocolate chips

Crunch Topping

• 2 tbsp chopped white chocolate

• 1/4 cup pistachio spread

• 1 tsp butter

• 1 cup (50g) cornflakes, coarsely crushed

• flaky sea salt

Instructions

1. Preheat oven to 350°F (175°C). Line and lightly grease a small loaf pan or 6‑inch cake pan.

2. Cream together the softened butter and 1 tbsp pistachio spread until smooth.

3. Add the sugar and beat until light and fluffy.

4. Mix in the egg and vanilla.

5. Whisk the flour, ground pistachio, baking soda, and salt in a separate bowl.

6. Stir the milk and 1½ tbsp pistachio spread together, then add the vinegar and let it sit for a minute.

7. Add the dry ingredients to the butter mixture, alternating with the pistachio‑milk mixture, mixing just until combined. Mixture should be slightly thick and pourable!

8. Pour the batter into the pan and bake 25-35 minutes, or until a toothpick comes out clean. Let the cake cool completely.

9. Make the ganache by gently heating the milk, pistachio spread, and chocolate chips until melted and smooth. Let it thicken slightly, then spread it over the cooled cake.

10. Melt the white chocolate, pistachio spread, and butter together, then fold in the crushed cornflakes.

11. Spread the crunch mixture over the ganache and sprinkle with flaky sea salt.

12. Dig right in and DEVOURRR (cake should be slightly fudgey w a nice crunchy contrast to the topping)
