Day 6 Sourdough journey (and question!)

Day 6 of this sourdough journey!

I swear this is longer than I thought I'd have the attention span to do this for 😂

Anyone know if it's normal for it to be more "battery" than "doughy" at this point? the first few days I had some raising and falling, but the last 2 have been very thin days.

... Read moreIt's completely normal to feel a bit confused or even worried about your sourdough starter's progress, especially around Day 6! Many of us beginners hit this point and wonder, 'Is mine doing what it's supposed to?' From my own experience and what I've learned, seeing a thin, batter-like consistency on Day 6 is actually quite common, and often perfectly fine. The first few days usually show some activity – a bit of rise and fall, maybe some bubbles. But then, it's typical for the starter to go through a 'slump' phase, often around Day 4 to Day 7. During this period, it might seem less active, thinner, and yes, much more like a yellowish batter than a thick dough. This is usually due to different types of microbes competing for dominance before the beneficial yeast and bacteria take over. Don't panic if you see your starter looking exactly like the one in the glass jar, perhaps with some starter residue clinging to the sides – it's part of the process! So, what should you really expect on Day 6? Reduced Activity: Don't be surprised if the strong bubbling and rising from earlier days have subsided. It might look dormant, but often, it's just working internally. Thin, Batter-like Texture: As you’ve noticed, it can become quite runny. This often happens if the starter is very hungry or if the hydration ratio is slightly higher. If it's very thin, consider slightly reducing the water or increasing the flour at your next feeding. Sour Smell: You might notice a strong, sometimes vinegary or alcoholic smell. This indicates the wild yeasts and bacteria are doing their job, producing acids. No Significant Rise: While some may see a small rise, a dramatic doubling isn't usually expected at this stage. Patience is key! What can you do if your Day 6 starter is looking particularly thin or inactive? Maintain Consistent Feeding: Ensure you're feeding it regularly, typically every 12-24 hours, depending on your recipe and ambient temperature. Discarding most of the old starter before feeding fresh flour and water is crucial. Warmth: Sourdough starters love warmth. If your kitchen is cool, try to find a warmer spot (e.g., near an appliance that generates heat, but not too hot!). Optimal temperature is usually around 75-80°F (24-27°C). Good Quality Flour: Using unbleached bread flour or whole wheat flour often gives the starter a boost. Avoid bleached flours. Hydration Adjustments: If it's too thin, a slight adjustment to a 1:1:0.9 or 1:1:0.8 (starter:flour:water) ratio might help thicken it up a bit, but generally, 1:1:1 is standard. Just be consistent. Patience! This is perhaps the most important advice. Sourdough starter development isn't linear. It's a journey with ups and downs. Many starters don't become truly active and ready for baking until Day 7, Day 10, or even longer, especially in cooler environments. Keep observing your starter. Look for small bubbles, even if it's not doubling. The yellowish, batter-like consistency might just be a stage it's passing through. Continue with your regular feeding schedule, maintain warmth, and trust the process. You're building a thriving ecosystem in that glass jar, and it just needs a little more time and care to reach its full potential! Keep going – the reward of homemade sourdough is absolutely worth it.
