Sautéed Garlic Mushrooms & Zucchini 🧄🌿
A quick and flavorful veggie side dish featuring earthy mushrooms and tender zucchini, sautéed with garlic, fresh herbs, and a splash of broth. Perfect as a main or side dish!
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
2 cups whole or halved mushrooms (cremini or button)
1 medium zucchini, sliced
2 tbsp olive oil or butter
1 small onion, finely chopped
3 cloves garlic, minced
½ cup vegetable or chicken broth
1 tbsp fresh parsley or thyme, chopped
Salt and black pepper, to taste
Optional: pinch of red chili flakes for heat
𝐃 𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬
1️⃣ Sauté Aromatics:
In a large skillet, heat olive oil or butter over medium heat. Add onion and cook until translucent (about 2-3 minutes). Stir in garlic and cook for another 30 seconds until fragrant.
2️⃣ Cook the Mushrooms:
Add the mushrooms and season with salt and pepper. Cook for 5-6 minutes until they begin to brown.
3️⃣ Add the Zucchini:
Stir in the zucchini slices. Pour in the broth and reduce heat to medium-low. Let everything simmer for 5-7 minutes until the veggies are tender and most of the broth has evaporated.
4️⃣ Finish & Garnish:
Season with more salt, pepper, and red chili flakes if using. Stir in fresh herbs and toss to combine.
5️⃣ Serve:
Serve hot as a light main dish or a tasty side to your favorite protein.
