Easy protein egg bites

Here’s an easier recipe for the week since everyone has family in town, these are good for meal prep too.

Protein egg bites:

8-10 eggs

Smoked cheddar

Crumbled turkey sausage

Chopped onion

Diced jalapeños

1/2 cup Greek yogurt (I use full fat, low sugar)

1/2 cup cottage cheese

Turmeric, chili powder, garlic powder, pink salt, pepper. Measure to your hearts content, and you can substitute these for whatever.

Sauté onions and meat with all your spices.

Process or blend until it starts looking fluffy.

Butter the slots and fill them up 3/4 of the way.

Bake at 300 degrees for 10-12 minutes.

This will make about 18-22

✨If you want to get fancy you can line the bottom with shredded hashbrowns and bake that in the oven for about 8 minutes before pouring your eggs in.
