Roast pumpkin and garlic at 400 F for 30/20 min depending on size
Cook cavatappi. In a pot melt 4 tosp butter, whisk in 4 tosp flour.
Slowly whisk in 2 cups milk until smooth.Stir in 1 cup gruyere and 1 cup sharp cheddar.Remove from heat. Squeeze in the roasted garlic now and fold in the roasted pumpkin.
Season with salt and pepper. Toss with pasta.Top with fresh thyme and roasted pumpkin seeds.Optional seeds
Dry seeds well, toss with a little oil paprika and garlic powder, roast at 350 F for 12 to 15 min.
