Homemade Tomato Bisque 🍅
My sister in law just gave me bags of fresh tomatoes from her garden so I knew I had to do something with them. There’s nothing better than some tomato soup and a grilled cheese on a cold fall day.
Tomato Bisque🥫
Ingredients:
Sheet pan full of halved tomatoes
Half of a large white onion, chopped
1 red bell pepper, chopped
1 jalapeño, chopped and deseeded (don’t add if you don’t like spice)
5 cloves garlic
3 tbsp butter
1/4 cup flour
3 cups chicken broth
1/4 cup heavy whipping cream
Fresh basil, chopped
Salt, pepper, onion powder, garlic powder to taste
Directions:
1. Preheat the oven to 450°, then spread out your chopped tomatoes, onion, peppers, and garlic on a baking sheet lined with parchment paper. Roast for about 30 mins until everything is soft
2. Once the veggies are done, let them cool for 10-15 mins. Then melt the butter in a pot on medium low heat. Once melted sprinkle in the flour and mix well for 1 min.
3. Gradually mix in the chicken broth one cup at a time until fully incorporated. Add your roasted veggies and seasonings. Then use an emersion blender to blend mixture until smooth over low heat. (Or put everything into a blender if you don’t have an emersion blender and then pour it back into the pot)
4. Simmer for a few minutes once fully blended and add more seasonings if needed.
5. Take off the heat and mix in the heavy cream and fresh basil. Serve with a grilled cheese and enjoy!
