This recipe is so easy, you'll wonder why you ever bought canned soup! I started making this a few years ago when I was looking for a healthier alternative to store-bought, and I've tweaked it over time to perfection. What I love most is how versatile it is. You can keep it super simple or add little touches to make it extra special. Here’s what you’ll need for this cozy bowl of goodness: Ingredients: 1 tablespoon olive oil 1 medium yellow onion, chopped 2-3 cloves garlic, minced 2 (28-ounce) cans crushed tomatoes (I prefer San Marzano for the best flavor!) 4 cups vegetable or chicken broth 1/2 cup heavy cream (optional, for a creamier soup!) 1 teaspoon dried basil 1/2 teaspoon dried oregano 1/4 teaspoon red pepper flakes (optional, for a little kick!) 1 teaspoon sugar (helps balance the acidity of the tomatoes) Salt and freshly ground black pepper to taste Fresh basil or parsley for garnish (optional) Instructions: Sauté Aromatics: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it. Add Tomatoes & Broth: Pour in the crushed tomatoes, vegetable or chicken broth, dried basil, oregano, red pepper flakes (if using), and sugar. Stir everything together. If you don't have an immersion blender, you can transfer batches to a regular blender (be very careful with hot liquids!) and then return it to the pot.
