If you've ever visited Crumbl and fallen in love with their French Toast Cookie, this homemade copycat recipe is a wonderful way to bring those bakery flavors right into your kitchen. What I especially love about this recipe is how it balances the sweet and warm spices — the cinnamon combined with the maple extract creates a comforting aroma and taste reminiscent of classic breakfast French toast. In my experience baking these cookies, attention to the egg wash with cinnamon really elevates the cookie's texture and appearance. Brushing the cookies with the cinnamon egg wash before baking gives them a golden-brown finish and adds an extra touch of spice that makes them irresistible. One tip I found helpful is to avoid over-flattening the cookies when shaping them into squares. Keeping them slightly thick helps retain a soft, chewy center after baking, which contrasts beautifully with the smooth buttercream frosting. Speaking of frosting, whipping the butter first before adding powdered sugar and extracts ensures a light and creamy texture that isn’t too dense. Adding both vanilla and maple extracts enhances the complexity of flavors and makes these cookies taste luxurious yet familiar. For anyone hesitant to try baking this version, don’t worry if your dough is a little sticky—sometimes a slight tackiness means it will bake into the perfect soft cookie. Just make sure to chill your dough if it becomes too difficult to handle. Lastly, this recipe is flexible. For an extra indulgent twist, drizzle a little maple syrup over the assembled cookie or sprinkle extra powdered sugar on top. Whether it’s for a cozy breakfast treat or a simple homemade dessert, these French Toast Cookies are a delightful way to enjoy bakery-quality cookies without leaving your house.
