under $25 Teriyaki Chicken, Veggies & Rice | Aldi
this meal is so simple to put together but also still full of flavor, and I prefer cooking it in a larger quantity so I can eat the leftovers throughout the week. I love that all of the ingredients are affordable and can be found at aldi.
90% of the dinners I cook for myself are asian dishes, and I swearrrrr by this teriyaki sauce from aldi!! I use it as a base in a lot of the sauces I use in different recipes (ex. my fried rice, my sushi bake, my dumpling dipping sauce, my udon noodles) it is so flavorful and a perfect consistency!

🍽️ PREPARATION:
(approximate recipe because I don’t measure when I cook)
- clean your chicken thighs & chop into bite sized pieces. place them into a bowl and season your chicken thighs to your liking, and add a splash of soy sauce (~1-2 tbsp) onto the chicken. cut 2 green onions into small pieces and add to the chicken thighs. mix thoroughly until chicken is fully coated.
- cook peas by steaming them and set aside
- chop broccoli into smaller pieces, and steam them, set aside
- prepare brown rice in your rice cooker (2-4 cups depending on how much you want to make)
- in a hot skillet with oil, add 2-3 chopped green onions as well as minced garlic (amount to your liking). then add chopped chicken thighs to the pan, flip once browned and cook until fully done.
- add teriyaki sauce (full bottle if wanting to have leftovers), add peas, add broccoli to the pan with the chicken. add additional seasonings to your liking. add a small splash of sesame oil at this step for deeper flavoring (optional)
