Sourdough Dutch Baby

Sourdough dutch baby is a weekend favorite around here. It’s so simple! Here’s how I make it!

I usually discard my sourdough into a bowl the night before and then feed it and let it sit on the counter over night. Then in a stone dish or cast iron skillet I’ll put 5-8 tablespoons of butter and then stick in the oven at 425 till the butter is melted and bubbling. Then in my mixer bowl I’ll put

* 6 eggs

* 2 TBSP of sugar

* A Splash of maple syrup

* A Splash of Vanilla

* all the sourdough starter (usually around a 1.5 cups)

* 1/2 a cup of milk

Then whisk for 2 minutes and pour into hot buttered pan. Immediately return to oven and bake till there is no more jiggle. Around 30 minutes. Serve with fruit, syrup, whipped cream, whatever your heart desires!

... Read moreOne of the things I love most about making a sourdough Dutch baby is how it combines the tangy depth of sourdough starter with the light, airy texture of a classic Dutch baby pancake. Using a cast iron skillet or a stone dish really helps create a beautifully crisp edge, while the butter caramelizes for extra flavor. I prefer organic maple syrup, like MAPLE GROVE Organic Maple Syrup, to drizzle over the top—it adds a rich sweetness that balances perfectly with the slight tartness from the sourdough. When preparing the batter, whisking the eggs and sugar thoroughly for about two minutes is key to achieving that nice rise and fluffiness. Also, letting the mixture bake until there's no jiggle ensures the center is fully set but still tender. It’s always exciting to see how much the Dutch baby puffs up in the oven and then gently falls after you take it out, making for a dramatic and delicious presentation. If you want to mix it up, adding fresh berries on top or folding in cinnamon into the batter can be a tasty twist. The versatility of this recipe makes it ideal for any brunch occasion, whether you're cooking for family or friends. From my experience, serving it with whipped cream or a dollop of Greek yogurt can add a creamy contrast that complements the dish beautifully. Overall, sourdough Dutch babies are a fantastic way to use your starter discard creatively and delight anyone who tastes it. The simplicity of the ingredients and the ease of preparation make it a go-to recipe that I return to often when I want something warm, comforting, and impressive on the brunch table.
