Ingredients:

100 Grams Sourdough Starter

300 Grams Filtered Water

10 Grams Salt

75 Grams RYE or Whole Wheat Flour

350 Grams Unbleached Flour

The key to start this process is to ensure your sourdough starter is at its most active point which is usually 3-5 hours after feeding.

Start with starter in a bowl, then add water and salt and mix until starter is almost completely incorporated into water. Add RYE or Wheat flour and Unbleached flour and mix until it just comes together and be sure to dip your fingers in water and remember the dough will be very sticky at this point.

Then cover and come back 30 minutes later to stretch the dough and then you will cover and let it proof for 10-12 hours in winter and 4-6 in the summer months.

Remove from bowl and using a floured surface begin to stretch and shape your dough. Place back in bowl with parchment paper that’s been floured for 30 minutes.

Heat your Dutch oven with lid for 45 minutes in a 450-degree oven (Fahrenheit). Score dough with razer and then place in Dutch Oven covered for 20 minutes and then remove lid for another 20 minutes then turn oven off and leave cracked. You’re looking for a beautiful Golden Brown Color on your bread. If it sinks, it might need another feed or more time to get active. Don't rush it; a strong starter is your foundation for a great loaf. Embracing Minimal Kneading: The Magic of Stretch and Folds One of the biggest game-changers for me was learning about 'stretch and folds' instead of traditional kneading.
