Baking these gluten-free and dairy-free muffins isn’t just about the recipe; it’s a therapeutic ritual that helps me regain control and find peace amid the chaos of symptoms and a busy 9–5 schedule. I use simple, wholesome ingredients like overripe bananas, almond and coconut flour, eggs, and natural sweeteners such as maple syrup. These ingredients not only fit the dietary restrictions often required by Hashimoto’s but also provide nourishing energy without triggering inflammation. The process of mashing bananas and mixing ingredients with intention gives me a moment to breathe and reset emotionally. One tip I’ve learned is that it’s okay to embrace imperfection, whether in baking or healing. The muffins might not always look perfect, but they are emotionally necessary and a reminder that progress isn’t linear. Adding cinnamon and optional dairy-free chocolate chips gives an extra touch of comfort and joy during tougher days. Healing from chronic inflammation is a journey, and self-compassion is key. Baking has become my way of practicing boundaries and showing kindness to myself. While I manage symptoms and attend doctor appointments, these muffins serve as a small but meaningful ritual that says: you’re not lazy, you’re inflamed—and showing up anyway is iconic.
