Gf + Df Mediterranean Bowl

I’ve done something amazing with this one! Super easy Mediterranean bowls. The flavors are to. die. for.

For the chicken meatballs:

1 lb ground chicken

1/3 cup breadcrumbs (I used gf)

1 egg (I used flax egg)

2–3 tbsp chopped parsley

zest of 1 lemon

2 garlic cloves minced

1 tsp salt

1 tsp paprika

1 tsp cumin

1/2 tsp oregano

black pepper

pinch chili flakes

Mix everything gently. Roll into about 24 tiny meatballs.

Bake at 425°F about 18 minutes

Cucumber salad: cucumber, parsley, lemon juice, salt pepper

Creamy lemon sauce:

1/4 cup mayo

juice of 1/2 lemon

little lemon zest

garlic powder or grated garlic

salt + pepper

chopped parsley

Serve over Jasmine rice! (Also works great for meal prep)
