Pumpkin Bread with Cinnamon Cream Cheese Frosting 🤎

If autumn had a flavor, this would be it. Pumpkin bread with cinnamon cream cheese frosting 🤤sweet, spiced, and just a little too easy to go back for seconds. 😉🎃

Recipe:

Pumpkin Bread:

1½ cups sugar

1 tsp baking soda

1 tsp ground cinnamon

¾ tsp salt

½ tsp baking powder

½ tsp ground nutmeg

¼ tsp ground cloves

2 large eggs, room temperature

1 cup canned pumpkin

½ cup canola oil

½ cup water

½ cup chopped walnuts

Cinnamon Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

1 ¾ – 2 cups powdered sugar (start low, taste as you go)

2–3 Tbsp sweetened condensed milk (for creaminess and shine)

1 tsp vanilla extract

½–1 tsp ground cinnamon (adjust to your liking)

Pinch of salt

Method:

1. Preheat oven to 350°. Combine the first

8 ingredients. Whisk together eggs, pumpkin, oil and water; stir into the dry ingredients just until moistened. Fold in the walnuts and, if desired, raisins.

2. Pour into a greased 9x5-in. loaf pan. Bake until a toothpick inserted in the center comes out clean, 65-70 minutes. Cool in pan 10 minutes before removing to a wire rack.

Frosting:

1. Beat the softened butter and cream cheese together until light and fluffy.

2. Add the vanilla, cinnamon, and salt; mix well.

3. Gradually beat in powdered sugar until smooth.

4. Stream in the condensed milk a tablespoon at a time until it’s glossy and spreadable. (You can thin it further with a teaspoon of milk if needed.)

5. Chill for 10–15 minutes before spreading for that perfect creamy swirl.
