Cheap and easy Gluten Free recipe for college kids
As a broke college student I’m required to get creative when it comes to cheap delicious meals. My dietary restrictions make this challenging. I took one of my favorite meals and tweaked it to fit my dietary needs. I got 3/4 of these ingredients at Aldi!!!
- I used 1 whole bag of GF pasta but, you can sub for any type of regular pasta. (The whole or half a box depending on how many you’re serving).
- I used about 1/3 of the grass fed beef. (If making this for more than 1 person I would have used all of it).
- I used a little less than half of the jar of sauce. Again, you can sub out any type of sauce I just prefer this one. I got this sauce from Publix ‼️
- lastly use any cheese you want I just love the taste of this one!! I used a few handfuls.

I always keep some shredded cheddar cheese on hand for an easy topping, or to melt into dishes.
For breakfast, think simple and quick. Gluten-free oats are a game-changer – just add hot water or milk, and top with fruit, nuts, or a drizzle of honey. Sometimes, I'll batch cook some GF pancakes or muffins on the weekend for grab-and-go options during the week. Eggs are also super cheap and quick: scrambled, fried, or even a microwave omelet with some leftover cheese and veggies can fuel your morning. For lunch, try making big batches of rice and adding some roasted veggies and maybe some seasoned ground beef for a hearty bowl. Gluten-free wraps or bread with deli meat and cheese are also quick options. I’ve found that many stores, including Aldi, have surprisingly good and affordable gluten-free bread.
Dinner doesn't have to be complicated either. Sheet pan meals are my absolute favorite for minimal cleanup! Toss some chopped chicken or ground beef with your favorite veggies (broccoli, bell peppers, onions are great), drizzle with olive oil and spices, and bake until cooked through. Another easy one is a quick stir-fry using rice and whatever veggies you have, adding some pre-cooked chicken or beef for protein. Chili or a hearty lentil soup can be made in a big batch and eaten throughout the week, saving you time and money. Always remember that many common ingredients like fresh fruits, vegetables, and plain meats are naturally gluten-free.
Shopping smart makes all the difference. As mentioned, Aldi is fantastic for budget-friendly gluten-free options, from pasta to snacks. Also, don't be afraid to check the clearance sections in grocery stores for discounted GF items that are nearing their best-by date. Buying in bulk for staples like rice or gluten-free oats can also save you a lot in the long run. Meal prepping on a Sunday for a few hours can seriously reduce stress and prevent last-minute, expensive takeout orders during busy study weeks. These little hacks make navigating the gluten-free college life so much more enjoyable and affordable!
