Most DELICIOUS lamb and rice recipe

This lamb and rice mandi is my favorite thing ever. The lamb is melt-in-your-mouth tender, the rice perfectly spiced, and the toasted pine nuts, almonds, and pistachios add the most satisfying crunch. Paired with creamy yogurt mixed with cucumber and carrots, every bite is balanced, comforting, and a little luxurious. Cooking this reminded me that taking your time with the basics can turn a “simple meal” into something unforgettable.

Soft Lamb Mandi Recipe:

1. Marinate the lamb: Mix lamb pieces with yogurt, turmeric, garlic, cinnamon, cardamom, salt, and a little olive oil. Let it sit at least 1 hour (overnight is best). (If you find Mandi spices ( add )

2. Cook the lamb: Slowly braise or oven-roast the lamb at low heat (around 160°C / 320°F) for 2–3 hours until the meat is soft enough to fall off the bone.

3. Prepare the rice: Sauté basmati rice with a pinch of turmeric, cinnamon, and a little ghee. Add water or stock and cook until fluffy.

4. Toast the nuts: Lightly toast pine nuts, almonds, and pistachios in a dry pan until golden and fragrant.

5. Yogurt side: Mix plain yogurt with grated cucumber, shredded carrots, and a pinch of salt for a fresh, creamy side.

6. Assemble: Layer rice on a platter, place lamb on top, drizzle some of the lamb juices over everything, sprinkle toasted nuts, and serve with yogurt on the side.
