salmon mango rice bowl (easy summer recipe) 🥭☀️

Summer Recipe # 3: Salmon Mango Rice Bowl 🍚🥭 Flaky and juicy salmon paired with coconut rice (can also do white rice) and a fresh mango salsa. This is one of my favorite summer go to dinners, so fresh, light, and delicious!

- 4 fillets of salmon

- 1 tablespoon olive oil

- Seasonings of choice (I did salt, pepper, garlic powder, chili powder, onion powder, and paprika).

Mango Salsa:

- Mango

- Red onion

- Avocado

- Cilantro

- Lime juice

- Salt and pepper to taste.

Directions:

1. Clean and pat dry the salmon fillets. Add oil and seasonings, massage the fillets until it’s well coated.

2. Air fry at 400°F for 7 to 10 minutes. Return the salmon for 1 to 2 more minutes if needed.

3. Combine mango, red onion, avocado, cilantro, lime juice in a bowl. Add salt and pepper to taste. Mix well. Refrigerate until use.

4. Serve coconut rice or white rice with the salmon and load up on the mango salsa. Serve immediately with more lime wedges. Enjoy!
