I can tell my people love tamarind! After my last post of the tamarind pop-tarts went viral, I had to come back with another one. I did my best to cut back on the sugar, making this enjoyable for everyone. These rolls are not sweet, and they have a perfect balance. If you want them to be sweeter, you can make icy powdered sugar, but the cream cheese is lovely. I love looking at everyone’s comments and hearing your memories of tamarind and how you or your family prepares this fruit with dishes.

First, you want to start with the best quality tamarind pods. The OCR really highlights the initial steps: you need to REMOVE SHELL AND VEINS carefully. This ensures you're getting pure pulp. Once you have the tamarind pulp, the next step is crucial for achieving that lovely soft, pliable texture: SOAK IN HOT WATER. I usually let mine sit for about 15-20 minutes. This softens the pulp, making it much easier to work with. Then, patiently REMOVE SEEDS AND STRAIN the pulp. You can press it through a fine-mesh sieve to get a smooth paste, which is ideal for fillings like these cinnamon rolls. This paste is your base for that delicious candied tamarind flavor. Now, about the 'candied' part – that’s where the DATE SUGAR comes in as a natural sweetener, perfectly complementing the tamarind's tang. Traditional candied tamarind often involves simmering with sugar, but using date sugar not only sweetens it but also adds a rich, caramel-like depth, making it a healthier and more flavorful alternative. When I combine this prepared tamarind paste with date sugar and a hint of CINNAMON, it transforms into this incredible, sticky-sweet, yet tangy filling. It's why this combination is so irresistible in my Tamarind Roll recipe. I’ve also found that using PLANT-BASED BUTTER in the filling, as mentioned in the original recipe, contributes to that melt-in-your-mouth texture without overpowering the delicate flavors. Vegan butter works wonders for achieving that classic cinnamon roll gooeyness. For anyone trying this at home, remember that baking with fruit fillings can sometimes be a little tricky. Don't be afraid to adjust the sweetness to your liking. If you prefer a richer, more intensely 'candied' tamarind flavor, you could even gently simmer your prepared tamarind pulp with a little date syrup before mixing it into the filling ingredients.
