✶ Russian Potato Pirojki ✶
Fluffy and airy dough made into potato pirojki. They are deep fried to golden and crispy color. Tender, tasty, so fluffy, full of flavor and very light, will leave you wanting more.
🔘Ingredients:
🔘Yeast dough
400ml Milk (Luke warm)
560g Flour
2 tsp yeast
1.5 tsp Salt
5 tbsp corn oil
100ml Water (Luke warm)
🔘Filling:
6 Potatoes
1 Onion
2tbsp dill
Olive Oil
🔘Prep and cooking process:
Into a large bowl add flour, luke warm milk, yeast, salt, corn oil and luke warm water. Mix everything well and knead the dough for 3-5 minutes. Cover with a lid and let the dough rise. While the dough is rising start preparing the filling.
In the medium saucepan heat the olive oil and add onions. Sauté onions until they will become golden color. Set aside.
Next peel, cut, and wash your potatoes. Add your potatoes to a pot of water bring to a boil. Continue to boil until fork tender.
Drain your potatoes, mash and add fried onions, dill and spices( salt, pepper and smoked paprika ). Mix everything well and the filling is ready.
After the dough has risen, release the air with spoon, like on the video.
Divide the dough into equal parts (about 22 pieces, could be more or less).
Roll out the dough, lay out the filling and form pirojki. Fry the pirojki in well heated oil over medium heat. Fry pirojki first with the seam down and turn to another side when it will be golden color. Continue with the rest of pirojki until you will be done with all of them. Serve warm and Enjoy.
