✶ Strawberry Tiramisu ✶

This tiramisu is made of fresh strawberries folded into layers, syrup soaking through sponge, mascarpone like silk and a final blush of freeze-dried berry dust.

🔘Ingredients:

🔘Strawberry Jam:

500 g strawberries

300g sugar

Half lemon juice

🔘Strawberry Syrup:

1/3 cup strawberry jam

1 tsp strawberry emulsion

1/2 cup of water

🔘Mascarpone Filling:

400g mascarpone cheese (cold)

1/2 cup sugar

2 egg yolks (Room temp)

1 tsp vanilla extract

300ml heavy whipping cream (cold)

🔘To assemble:

120g cubed strawberries

34 ladyfinger cookies

🔘Decor:

300ml whipping cream (cold)

35g freeze dried strawberries

3 tbsp powdered sugar.

🔘Prep and Baking Process:

Add cubed strawberries, sugar, and lemon juice to a saucepan.

Cook the strawberries, stirring occasionally, at medium heat.

When the strawberries come to a boil, turn the heat down and continue to cook at low heat. The jam will be dark, and thick.

Remove the jam to a bowl, place a piece of plastic wrap directly on the surface of the jam, and let it cool down.

Combine yolks, sugar and continue whisking over a saucepan of simmering water for 10 minutes. Remove from steam and whisk for a few minutes to help it cool cool.

Beat mascarpone in the cooled yolk mixture until blended. Add vanilla extract and mix.

Whip cold heavy cream to stiff peaks. With a spatula, fold half into the mascarpone mixture then fold in the remaining half until blended. Set aside.

Mix the jam, emulsion and water. Whisk until combined. Set aside.

I used a 13x9” pan. Dip each ladyfinger in the Strawberry Syrup, and lay them on the bottom of the pan. Top the ladyfingers with half of the mascarpone cream and spread the filling evenly.

Drizzle about 1/3 of jam on top of the mascarpone. Sprinkle chopped strawberries evenly on top of the jam.

Make another layer of ladyfingers on top of the chopped strawberries.

Dip each ladyfinger in the syrup, and place on top of the layered dessert. Push down gently on the cookies as you place them on top of the strawberries. Top the cookies with the remaining half of the Mascarpone Filling.

Let the tiramisu sit in the fridge overnight.

Before serving, make the whipped cream for the top. Simply whip the heavy cream until stiff peaks form. Place it in a piping bag. Pipe small dots like on the video.

Crush dried strawberries in a small ziplock until they become a fine powder.

Sift the freeze dried strawberry powder on top of the tiramisu. Decorate with sliced strawberries. Slice, Serve and Enjoy ♥️
