I also focus on batch cooking staples. Things like roasted chicken, a big pot of chili, or a large batch of spaghetti sauce can be repurposed into different meals throughout the week. Leftover chicken can become chicken salad sandwiches for lunch, or turn into quesadillas. Chili can go over baked potatoes or be served with cornbread. This saves time and ensures we always have something ready to go. And let's be real, some nights call for super simple meals. There are days when I'm exhausted, and that's okay! On those nights, we might have breakfast for dinner (scrambled eggs and toast), or a quick pasta dish. It's about finding balance and not striving for perfection every single night. The goal is to nourish my family and spend quality time together, not to be a gourmet chef every evening.
