Roasted Red Pepper & Tomato Soup
Ingredients:
• 5 ripe tomatoes
• 2 red bell peppers
• 1 large onion
• 1 tbsp vegetable oil
• Salt, to taste
• Pepper, to taste
• Garlic powder, to taste
• 4 cups vegetable broth
Instructions:
1. Prepare the vegetables:
• Preheat your oven to 400°F (200°C).
• Cut the tomatoes, bell peppers, and onion into large chunks.
• Place them on a baking sheet.
• Drizzle with 1 tbsp vegetable oil and season with salt, pepper, and garlic powder to taste.
2. Roast:
• Roast in the preheated oven for 40 minutes total:
• First 20 minutes, then flip the vegetables.
• Roast for an additional 20 minutes until softened and slightly caramelized.
3. Cool:
• Let the roasted vegetables cool down slightly.
4. Blend:
• Transfer the roasted vegetables to a blender.
• Add 4 cups of vegetable broth.
• Blend until smooth and creamy.
5. Serve:
• For a cold soup, serve immediately (great for hot days).
For a warm soup, transfer to a pot and heat gently until warmed through.
