This dish truly feels gourmet but is surprisingly simple to whip up, perfect for a cozy weeknight dinner or when you want to impress without all the fuss. First, let's talk about the 'stuffed' part. For me, a classic creamy spinach and cream cheese stuffing is a winner. You'll need about 4-6 oz of fresh spinach, lightly sautéed and squeezed dry to remove excess water. Mix that with about 2-3 oz of softened cream cheese, a clove of minced garlic, a pinch of salt, and a dash of black pepper. Some people like to add a sprinkle of Parmesan or a tiny bit of lemon zest for an extra zing, which is optional but delicious! Now for the salmon fillets: you'll want about 4-6 oz fillets, skin on or off, it's totally up to you. Season with salt, black pepper, and a tiny pinch of nutmeg if you're feeling fancy – it really elevates the flavor! Once your salmon is perfectly cooked, plate it up and generously spoon that rich, creamy Alfredo sauce over the top.
