Lemon Cake Mix Cookies 🍋
I must be in my lemon era 🍋✨ First the blueberry lemon cake… and now THESE cookies.
Soft, chewy, a little zesty, and loaded with white chocolate… honestly dangerous in the best way.
🍋 Lemon White Chocolate Cake Mix Cookies
Ingredients:
• 13.25 oz Betty Crocker Lemon Cake Mix
(If using Duncan Hines 15.25 oz, increase butter or oil to 1/2 cup)
• 1/3 cup melted butter (or vegetable/canola oil)
• 2 large eggs
• 1 2/3 cups white chocolate chips (10 oz)
Instructions:
1. Gather your ingredients.
2. In a large bowl, mix cake mix, melted butter (or oil), and eggs until well combined.
3. Stir in white chocolate chips.
4. Cover and chill dough in the fridge for 2 hours.
5. Preheat oven to 350°F.
6. Line baking sheets with parchment paper.
7. Roll dough into 1 1/2 tbsp balls and place on baking sheet.
8. Bake 7–13 minutes (shorter for non-stick, longer for aluminum pans).
9. Let cool on the pan for 5 minutes, then transfer to a wire rack.
And then… try not to eat half the batch standing at the counter. No promises though.
Notes:
Salted or unsalted butter both work, but salted gives these cookies that extra little something 🤌
