Texas Sheet Cake Cookies

Ingredients**:

**For the Cookies**:

- 1 box (15.25 oz) chocolate cake mix

- 2 large eggs

- 1/3 cup vegetable oil

- 1 teaspoon vanilla extract

**For the Glaze**:

- 1/2 cup unsalted butter

- 2 tablespoons cocoa powder

- 3 tablespoons milk

- 2 cups powdered sugar

- 1 teaspoon vanilla extract

- 1/2 cup chopped pecans (optional, for topping)

**Directions**:

**1. Prepare the Cookies**:

- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

- In a large bowl, combine the chocolate cake mix, eggs, oil, and vanilla extract. Mix until a thick dough forms.

- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

- Bake for 8-10 minutes, or until the cookies are set around the edges but still soft in the middle.

- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

**2. Make the Glaze**:

- In a medium saucepan, melt the butter over medium heat.

- Stir in the cocoa powder and milk, whisking until smooth. Bring to a simmer, then remove from heat.

- Gradually whisk in the powdered sugar and vanilla extract until smooth and slightly thickened.

**3. Glaze the Cookies**:

- Once the cookies are completely cool, spoon the warm glaze over the top of each cookie.

- If desired, sprinkle chopped pecans on top while the glaze is still wet.

- Let the glaze set for about 10-15 minutes before serving.

The BEST cookies I have ever made. The only thing I did a little different was used a half of a small box of instant chocolate pudding to the to the cake mix. I’m sure they still would’ve turned out perfect without it, but I always have to add a little of my touch to all recipes lol. The icing on these cookies are🔥
