Creamy, comforting, and perfect for a cozy pasta night 🤍✨
If you're looking to enjoy creamy pasta without relying on heavy cream, this almond flour white sauce offers a fantastic alternative. Almond flour acts as a natural thickener, giving the sauce a silky texture while adding subtle nutty notes that complement the parmesan and Italian seasoning beautifully. When I first tried this recipe, I was surprised by how rich and smooth the sauce turned out, even without traditional cream. One tip to enhance the creaminess further is to ensure you whisk the almond flour with the melted butter or oil and garlic thoroughly before adding the milk. This step helps prevent lumps and promotes a velvety consistency. Using whole milk or a plant-based milk with a creamy profile also improves the mouthfeel. Adding sautéed mushrooms and spinach not only boosts the nutritional value but also brings depth to the flavor profile. Mushrooms add an earthy umami richness, while spinach adds a fresh vibrancy. Including a pinch of chili flakes can add a nice subtle kick that balances the creamy texture. I've found that this sauce is versatile—feel free to experiment by adding other vegetables like roasted bell peppers or substituting parmesan with a vegan cheese alternative for a dairy-free version. For a gluten-free adaptation, simply swap regular farfalle with gluten-free pasta varieties. Overall, this creamy almond flour pasta is a satisfying option for those wanting to avoid heavy cream without compromising taste or texture. It’s great for cozy nights in and pairs well with a crisp green salad or garlic bread for a complete meal.
