If you're wondering what 'ulam' means, it's essentially the main dish or viand served with rice in Filipino cuisine, and trust me, pork chops shine in this role! What makes Pork chop such a fantastic ulam? First, it's incredibly versatile. You can marinate it in so many ways to create different flavor profiles. Second, it cooks relatively quickly, which is a lifesaver on hectic days. And let's be honest, who doesn't love a tender, juicy pork chop? It’s hearty, satisfying, and pairs wonderfully with a steaming plate of white rice – the ultimate comfort food pairing. Over the years, I've picked up a few tricks to ensure my Pork chop ulam turns out amazing every time. Marination is Key: Don't skip this step! Even 30 minutes can make a huge difference. For a classic Filipino-style ulam, I love a simple marinade of soy sauce, vinegar, crushed garlic, a little brown sugar, and black pepper. If I'm feeling fancy, I might add some calamansi juice or lemon. Don't Overcook: This is crucial for juicy pork chops. A good meat thermometer is your best friend here – aim for an internal temperature of 145°F (63°C) for medium-rare to medium, followed by a rest. High Heat Sear: Get your pan nice and hot with a bit of oil before adding the pork chops. This creates a beautiful, caramelized crust that locks in juices. Then, you can reduce the heat to finish cooking through. Rest Your Meat: Just like steaks, pork chops benefit from resting for 5-10 minutes after cooking. This allows the juices to redistribute, resulting in a more tender and flavorful bite. While a simple pan-fried Pork chop is delicious, sometimes I like to switch things up. Sweet & Savory: Try a marinade with honey or maple syrup, soy sauce, and a touch of ginger. Spicy Kick: Add some chili flakes or a dash of hot sauce to your marinade. Creamy Mushroom Sauce: After cooking your pork chops, deglaze the pan with some broth, add sliced mushrooms, and a splash of cream for a rich, comforting sauce to spoon over your ulam. Air Fryer Convenience: For an even easier cleanup and crispy results, air frying your marinated pork chops is a game-changer. Just make sure to preheat and don't overcrowd the basket! My favorite way to enjoy Pork chop ulam is, of course, with a generous serving of freshly cooked rice. For a complete meal, I often add a simple side salad with a vinaigrette dressing, or some steamed vegetables like green beans or broccoli. The freshness cuts through the richness of the pork beautifully. It’s truly a complete and satisfying meal that never disappoints!
